Shrimp In Roasted Tomato Cheese Sauce (similar to a versatile creamy Alfredo sauce)


1 1b. of cleaned and deveined shrimp
1 cup of pepper dews
1 cup of tomatillos
1 cup of shiitake mushrooms
1 cup of cherry tomatoes
1 small jalapeño pepper
4 fresh basil leaves
1 medium lemon
4 peeled cloves of garlic
8 oz of plain goat cheese *may substitute with Ricotta cheese
¾ cup of shaved Parmesan cheese
1 ½ tablespoons of butter
olive oil
sea salt
black pepper


1. Season shrimp with 1 1/2 tablespoons of olive oil, 2 teaspoons of black pepper, 2 teaspoons of sea salt, and juice from lemon. Cover and refrigerate for 20 minutes.
2. Place all veggies into a baking sheet, drizzle with olive oil, sea salt, and black pepper. Bake for 20 minutes at 400 degrees.
3. Place a saucepan on low heat, add butter and olive oil, bring to a simmer.
4. Chop four garlic cloves add to sauce pan.
5. Remove roasted veggies from oven.
6. Add roasted veggies and cheese to blender, blend for 30 seconds.
7. Add roasted veggie and cheese mixture to sauce pan, stir together.
8. Add 1 pinch of salt.
9. Add ¾ cup of shaved Parmesan cheese, stir until cheese melts into sauce.
10. Add raw shrimp to sauce, cook until shrimp turns pink.
11. Serve over rice or pasta.
