I wanted bring a healthy twist on traditional meatballs. Most meatballs are traditionally served over pasta. Keeping healthy choices in mind, I am serving these savory meatballs over brown rice.

Ingredients:

2 pounds of turkey meat ground. 1 pound dark 1 white
8 oz of cracker meal
1 sweet onion
1 large spring of rosemary
Salt/ pepper to taste
1/4 cup of adobo
5 cloves of garlic
1 lemon juice
1 bunch of green onions chopped

Directions:

Combine all seasonings and marinade turkey meat overnight.

Add 2 eggs to turkey mix all together. Form meatballs to your likening, then pan fry until brown. Place in over 375 to 425 be pending on the strength of your oven. 20/25 mins ( don’t over cook.)

Peach sauce

4 peaches chopped
1 tablespoon of vanilla
1/2 cup raw sugar
1 tablespoon of cinnamon
1 teaspoon of cumin
2 tablespoons of olive oil
2 tablespoons of real butter
Sliced almonds and pea cans

Sauté in a pan until peaches are tender and become soft, add turkey balls simmer for 10 min in low temp.

Serve over wild barley rice
