I am excited to share this week’s recipe with you.

Do you often think you don’t have room for pizza in your healthy lifestyle? Think again!

I don’t know too many kids (both big and small) who don’t LOVE pizza.

If your children are anything like mine, pizza has to be on the menu.

Making your own pizza at home is a great way to know what you are eating and it’s made exactly how YOU want it.

I am sharing my version of Cuban Pizza. It’s much healthier than traditional store bought or restaurant pizza. It’s much easier on the pocketbook as well.

Ingredients:

Meats

1 pound of lean ground beef
½ pound of bison

Vegetables

2 cups of tomatoes (variety)
½ cup of chopped onions

Other Ingredients

1 lump of fresh/frozen pizza dough
1 can of white beans
1 sweet plantain
2 cups of shredded cheese (any type)
Olive oil
Lysanders meat rub
Sea salt
Black pepper

Directions:

  1. Allow frozen pizza dough to thaw at room temperature.
  2. Combine both meats and season with Lysanders Meat Rub, refrigerate for 20 min.
  3. Cook one can of white beans, season with olive oil, salt, and pepper until soft.
  4. Drizzle 2 cups of tomatoes with olive oil, salt, and pepper; roast for 20 min at 400 degrees.
  5. Once dough is thawed, carefully stretch dough and carefully form to fit pizza pan.
  6. Sprinkle flour over dough to create a smoother texture.
  7. Heat pan and cook ½ cup of chopped onions until translucent. Cook meat until browned and lastly add tomatoes.
  8. Drizzle olive oil over the dough, add a layer of white beans, a layer of meat and tomatoes, and top with your favorite shredded cheese. Bake at 375 degrees for 20 to 25 min.
  9. While pizza is baking, pan fry sweet plantains until crispy.
  10. Remove pizza from oven top with plantains.
  11. Serve & Enjoy!
